2 cups red skinned potatoes, peeled and cut into cubes
3 tbsp. margarine or butter
1 small onion, finely chopped
3 tbsp. flour
Ground red pepper
Black pepper
3 cups of milk
1/2 tsp salt
1 cup cubed cooked ham
1 cup ( 4 oz) shredded Cheddar cheese

Directions:
Directions:
Bring 2 cups water to a boil in large saucepan. Add potatoes simmer until tender. Drain, reserving liquid. Measure 1 cup reserved liquid, adding water if necessary. Melt margarine in same saucepan over medium heat. Add onion, cook and stir until tender, but not brown. Stir in flour, season to taste with red and black pepper. Cook 3 - 4 minutes. Gradually add potatoes, reserved liquid, milk and salt to onion mixture. Stir well. Add ham. Simmer over low heat 5 minutes, stirring frequently. Remove from heat, cool 5 minutes. Stir in cheese until melted
