Rhubarb Meringue Pie Recipe

3 c finely cut rhubarb
1 c sugar
½ c raisins
3 tbsp tapioca
½ c water
3 eggs (separated)
¼ c sugar

Meringue
3 egg whites
¼ c sugar

Directions:
Directions:
Pie Filling:
Mix rhubarb, sugar, raisins, tapioca and water in a pot. Boil gently for 25 min. Separate 3 eggs. Into slightly beaten egg yolks, add a little of the rhubarb mixture. Then add very, very slowly the rest to the rhubarb. SLOWLY,
Cook for 2 more minutes. Cool to lukewarm and spread into a cooked pie shell. Cover with margarine

Meringue:
Beat together until stiff. Pile the meringue onto the pie. Brown in a 350º. F oven. Watch carefully.

Note: You would never know this was a rhubarb pie. Even those who say they dislike rhubarb, enjoy this.
