2 tsp. olive oil
1 tbsp. coarse-grained mustard
1 tbsp. sour cream
salt & pepper to taste
8 cups fresh spinach leaves, washed and dried
1 pound sole, flounder or haddock fillets
sliced lemon

Directions:
Directions:
Preheat oven to 450ºF

Place four squares of foil on a work space. Mound 2 cups of spinach on one half of each piece of foil. Season with salt and pepper. Place fish fillets on top of spinach and season with salt and pepper. Combine mustard and sour cream, spread mixture over fish. Fold foil over fish and pleat edges to seal. Place packets on a baking sheet.

Bake packets for 15 minutes, or until fish is opaque in the center and flakey. Serve with lemon wedges.
