12 Jumbo Shrimp (I buy already cooked/seasoned shrimp)
Creole Seasoning
1 pound ground turkey
canola or olive oil for sauteeing
1 pound chicken -grilled and then cut into small pieces
red and yellow peppers cut into small pieces (1/2 of each)
1/2 cup celery chopped
1/2 cup scallions
2 cloves minced garlic
1 pound mild italian sausage (pork or turkey work well, I've also used breakfast sausage)
1 bay leaf
1 cup chicken stock
6 cups cooked rice

If the rice is not already prepared--prepare 6 cups of white rice. Put a chicken boullion cube in to maximize the flavor.

If shrimp is not already cooked, sprinkle it with creole seasoning and grill or broil them. Set aside.
Grill the sausage (or roast/broil) and then slice into pieces.
Season the chicken and then grill (or saute/broil)

Season the ground turkey with salt and pepper and then brown in a pan. Cook through and then set aside (drain if necessary). Don't clean the pan yet.

Cook the vegetables in the pan until crisp/tender.

Add the rice, sausage, chicken, sausage, and shrimp to the pan, along with the bay leaf and chicken broth. Cook until warmed through. Add salt/pepper/creole seasoning as desired to taste.

This is my version of a recipe from the Plain Dealer newspaper 6/12/07. The original recipe is by Glenn Lyman, Lebron James personal chef (I'm glad he gave out the recipe before he abandoned Cleveland!).

In the summer my family likes to grill almost all of the meats and then add them to the rice and ground turkey. It is extremely fun and exceptionally delicious!
