5 pounds russet potatoes
18 large eggs
4 medium yellow onions

Sauce ingredients:
2 tablespoons celery seed
1.5 teaspoons celery salt
2 tablespoons apple cider vinegar
24 ounces HELLMANS mayo
6 tablespoons yellow mustard
1/2 teaspoon black pepper

Directions:
Directions:
Boil eggs 7 minutes and stop the cooking of them with cold water. Peel and refrigerate.
Boil potatoes in salted water (2 tablespoons salt) until they will slide off of your fork when tested. Stop the cook with cold water and drain well. They need to be dry to proceed.
Mix the sauce ingredients and set aside.
Chop onions.
Cut each egg into 4 pieces.
In large mixing bowl, add 1/4 each of dressing, onions, eggs, and potatoes in layers. Repeat--kinda like building a lasagne. Fold everything GENTLY.
Serve with a bit of Old Bay Seasoning on top.
