5 slices bacon, cut into small pieces
1 c. chopped onion
1 tbsp. finely chopped jalapenos (can use jar jalapenos)
2 cups chopped tomatoes or 1 lg can chopped or crushed
1 clove garlic, minced
3 c. water
2 beef bouillon cubes
4 - 15.5 oz. cans black-eyed peas, drained
3 c. grated cheddar, or velvetta cheese (I use velvetta)

In 8 qt. pot, saute bacon, add onion, jalapenos, tomatoes, and garlic. Saute 3-5 minutes. Add water and bouillon cubes, simmer 3-5 minutes till cubes dissolve.
Add black-eyed peas and stir. Add cheese of choice, simmer till cheese is melted. Add black pepper to taste if desired.
