4 Tb olive oil
3 lbs chili grind beef
2 large onions, chopped
1 clove garlic, minced
1 qt water
5 medium tomatoes, seeded and coarsely chopped
8 oz tomato sauce
6 oz tomato paste
8 Tb chili powder
8 jalapenos, chopped (with seeds)
8 oz diced green chiles
2 Tb Tabasco sauce
1 tsp cayenne pepper
½ c vinegar
¼ c masa harina or cornmeal

Heat oil in a 6 to 8 quart kettle. Add meat, onions, and garlic, and cook until the meat has lost its redness. Add the rest of the ingredients, mix well, and bring to a boil. Reduce heat and simmer, covered for 1 ½ hours, stirring frequently.

Optional information: you may substitute 1 ½ lbs of lean ground beef and 1 ½ lbs ground pork for the chili meat. Also, use rubber gloves when working with hot peppers. Wash your hands well, and do not place your hands near your eyes.
