3 cloves of garlic
1 T salt
3/4 C water
1 C cider vinegar
2 to 3 sprigs fresh parsley, chopped
2 T lemon juice
1/2 C sugar
1 T capers (optional)
2/3 to 1 cup oil

Directions:
Directions:
Peel garlic. Place on cutting board with salt and finely mince garlic. In a wide mouth jar or mixing bowl, place the garlic, water, vinegar, parsley, lemon juice and sugar. Mix well. Stir in capers and then the oil.

Stores nicely in a 1 quart bottle from Heinz vinegar.

Johnny's Steakhouse in South Omaha has been a dining treasure for years and their dressing is legendary. Mom said she has used red wine vinegar instead of cider and olive oil instead of vegetable oil. Either way, its delicious!!
