Ingredients: 1/2 stick unsalted butter 1 Tbsp vegetable oil 2-1/2-3 lbs yellow onions, peeled and thinly sliced 1/4 tsp sugar Salt and pepper, to taste 2 cloves garlic, minced 2 cups dry white wine, such as sauvignon blanc or white vermouth 2 bay leaves 2 quarts beef broth 1/2 Tbsp beef concentrate, such as Great Flavors Concentrate Rustic bread, sliced 3/4'' thick 3-4 cups Gruyere cheese, shredded 1-1/2 cups Mozzarella cheese, shredded

Directions:©Melt the butter with the oil in a large stockpot over low heat. Add the sliced onions and sugar and season generously with salt and pepper. Increase the heat to medium and cook the onions for 35-40 minutes, or until the onions soften and turn a medium-brown color. Stir occasionally. Add the garlic and sauté for 1-2 additional minutes.
Increase the heat to high and stir in the white wine. Once the liquid has reduced by half, add the bay leaves, beef broth, and beef concentrate and simmer over medium-low heat, roughly 40-45 minutes.
While the soup is simmering, preheat your oven to 400°F. Place the sliced bread on a sheet pan and toast each side for 3-4 minutes. Set aside.
Remove and throw away the bay leaves. Arrange six oven-safe bowls on the sheet pan. With a slotted spoon, remove the onions and cover the bottom of each bowl. Ladle the hot soup into each bowl, leaving about 1/4'' space at the top for a slice of toasted bread. Combine both cheeses and sprinkle it generously on top of the bread. Bake until the cheese turns golden and bubbly, about 15 minutes. Serve with any additional bread pieces. |
