Minestrone Soup Recipe

2 T. butter or olive oil
1 lb. sweet Italian Sausage ( I like the chicken sausage from Trader Joes)
1 onion chopped
1 Leek chopped, white part only
1 T. minced garlic
8-10 red potatoes quartered
1 can white cannelini beans
1 can red kidney beans
2-3 diced carrots
1 cup green beans
2 stalks diced celery
1-2 sliced zucchini
1 cup diced tomatoes ( canned or fresh)
2 T. pesto
2 cups shredded kale or swiss chard or napa cabbage
1T. bouillon paste
2 cups chicken stock
4-5 cups water
1-2 cups of pasta, I like oreccichette but you can use rotini or bow ties or small penne
shredded parmesan cheese

Cook the Italian Sausage, onions and leeks in the oil or butter in a large dutch oven or soup pot.

Add all the other ingredients except the pasta and parmesan cheese, bring to a boil then reduce the heat and let simmer on low heat for at least an hour. I usually let mine simmer for 3-4 hours.

15-20 minutes before serving, add the pasta and bring it back to a boil until the pasta is cooked al dente. You may need to add water if the soup gets too thick.

Serve with shredded parmesan over the top.
