1 lb. carrots, peeled and sliced
1 medium onion, chopped
1 14 oz. can vegetable broth
1 cup low or non fat ricotta cheese

Directions:
Directions:
Combine carrots, onion and broth. Cook until carrots are soft. Cool for 10 minutes. Blend carrot mixture in blender until smooth

Add ricotta cheese and blend until smooth. Serve hot or cold
