8 chicken thighs, about 2 pounds, skinned
1/2 tsp salt
1/4 tsp black pepper
1 tsp olive oil
2 assorted bell peppers, red, green or orange, seeded and chopped
1 onion, chopped
1 (14 1/2 oz) diced tomatoes with italian herbs
1/4 pound fresh mushrooms, quartered
4 galic cloves, minced
1/2 tsp sugar

Spinkle chicken with1/4 tsp of the salt and 1/ 8 tsp of the black pepper. Heat the oil in a large skillet oved med-high heat. Add the chicken and cook until browned, about 2 minutes on each side.
Transfer the chicken to a 5-6 quart slow cooker. Add the bell peppers, onion, tomatoes, mushrooms, garlic,
sugar and remaining salt and pepper to the skillet. Cook until the vegtables begin to soften, 3-4- minutes, Transfer the vegtable mixture to the slow cooker. Mix well. Cover and cook until the chicken and vegtables are fork tender, 3-4-hours on high or 6-8 hours on low.
Transfer the chicken to a serving platter. Strain the sauce through a strainer into a medium saucepan. Add vegtables to chicken, cover and keep warm. Bring sauce to a boil over med-high heat. Cook, stirring occasionally, until the sauce is slightly thickened and reduced to one cup, 10-12 minutes. Serve the sauce with the chicken and vegtables. Serve alone or with pasta. If serving with pasta, more sauce will be needed.
