1 tablespoon minced shallots
3/4 teaspoon sesame oil
3/4 cup creamy peanut butter
1/4 cup lemon juice
1/4 cup soy sauce
1/2 cup water
1 teaspoon red pepper flakes
2 cloves garlic, crushed
2 tablespoons shredded coconut
2.5 tablespoons brown sugar

Directions:
Directions:
Saute shallots in sesame oil in a saucepan until transparent. Add the peanut butter, lemon juice, soy sauce, water, red pepper flakes, garlic, and shredded coconut. Cook, stirring constantly over medium-low heat for four minutes. Add brown sugar. Cover and simmer, stirring frequently, for 10 minutes. If sauce thickens, add more water. Serve warm with fresh crudités.
