1 cup sliced carrots
1/2 cup chopped onion
1/2 cup celery, sliced thin
1 pound boneless, skinless chicken breast, cut into 1 inch cubes
1 can (46 oz) chicken broth
1 cup cheese filled tortellini's, uncooked
1/2 tsp dried thyme
1/4 tsp black pepper
1 bay leaf
2 T fresh parsley, snipped

Directions:
In soup pot, cook chicken over medium heat 5-7 minutes or until no longer pink. Add remaining ingredients except parsley. Bring to a boil over medium heat. Cover. Reduce heat. Simmer over med-low heat 20 minutes or until pasta is tender. Before serving, remove bay leaf and add the fresh parsley.
