2 whole eggs
½ cup light corn syrup
¼ cup butter melted
¼ cup sugar
1 tsp. vanilla
½ cup flour, with ½ tsp. baking powder
1 cup unsweetened medium coconut
2 ½ cup ripe peaches, peeled and chopped (3-4 large peaches)
½ cup chopped walnuts

Directions:
In a medium bowl beat eggs. Add next 6 ingredients. Mix at low speed until smooth. Stir in coconut and peaches. Pour into deep, greased and floured 10” pie plate. Top with chopped nuts and sprinkle generously with nutmeg and cinnamon. Bake at 350 F over for 40 minutes or until custard is set. Allow to stand about ½ hour for easier serving. Delicious refrigerated. Freezes well.
