Whole, fresh jalapenos
Cream cheese
Cooked baby shrimp
Crabmeat
Sausage or other favorite meat
Cajun or seafood seasoning

Also called “armadillo eggs” or “jalapeno poppers” this recipe is a great fireside appetizer to compliment burgers, fajitas, steaks, or just about any other southwest meal.

· Whole, fresh jalapenos
· Core out center of jalapenos, removing the stem and seeds, creating an
empty pepper. To add more heat, leave seeds in.
· In a separate bowl, mix cream cheese with cooked baby shrimp,
crabmeat, sausage, or other favorite meat and season to taste with
Cajun or seafood seasoning
· Fill the empty jalapeno with the cream cheese mixture
· Wrap each jalapeno with a single layer of bacon, using a toothpick to
hold in place (soak toothpicks in water prior to use)

Create a hot fire using charcoal, wood coals, (or a gas grill if you have no culinary skills)

Place stuffed jalapenos over the grill until bacon is done and the jalapeno is charred on all sides.

Place in a jalapeno tray (or just put them in a pan) and allow melted cheese mixture to cool to touch.


Enjoy with a cool beverage of your choice!
