Ingredients: 1 Tbs sugar 8 oz can beef consommé 2 Tsp oregano 2 Tbs paprika 2 Tbs cumin 1 Tbs celery salt 7 Tbs chili powder 2 Tbs MSG 1 Tsp cayenne pepper 1 Tsp garlic powder 1 Tbs Mole paste 2 lbs beef chuck (cut into 3/8" cubes) 2 lbs top round (coarsely ground) 2 lbs pork butt (medium ground) 3 cups minced onion 2 Tbs fresh minced garlic 1 cup green chilis (chopped) 1 20 oz can tomato sauce 1 can beer

Directions:In a small saucepan dissolve the first 11 ingredients in 2 cups of water. When this is dissolved, add this mixture to a 6 qt cooking pot and keep at a light boil. In a frying pan, add the meat in a little vegetable oil, Add the sautéed meet to the cooking pot. Saute the onion and garlic and add to the cooking pot along with the green chilis. Then add tomato sauce and the beer. Simmer uncovered for 1 1/2 to 2 hours stirring occasionally. Let stand for 1/2 hour and skim off excess grease. Adjust seasoning to taste. You may thicken this with Masa Harina or Cornstarch with water to suitable consistency. Cover and let stand one hour before serving. |
