Ingredients: 1 pound ground beef ˝ pound Italian sausage olive oil ˝ medium onion, diced 2 Cloves Garlic, Minced 2 cups sliced, fresh baby portabella mushrooms 1 cup white wine (may substitute 1 cup vegetable broth) 2 – 28 oz. cans diced tomatoes 2 – 6 oz. cans tomato paste 2 tablespoons fresh oregano chopped (or 2 teaspoons dried) ˝ teaspoon cayenne pepper 1 small jar capers (optional) salt pepper large box dried pasta, preferably spaghetti , linguine, or farfalle (8 servings)

Directions:1. Brown the ground beef and Italian sausage. If using very lean meat, use some olive oil to coat the pan. Drain and dispose of grease. Set aside for later use. 2. Add enough olive oil to a skillet to coat the pan, approximately 2 tablespoons. Heat oil over medium to medium high heat until hot, but not smoking. Add the onion and sauté until translucent. 3. Add the garlic and cook for about 1 minute. If the garlic browns too quickly, reduce heat to medium. Add the mushrooms and sauté until the mushrooms release their moisture and then allow the moisture to reduce by half. You may use canned mushrooms. If using canned, drain well and sauté with garlic and onion until heated thoroughly. Add salt to suit your taste (1/2 to 1 teaspoon). 4. Add the wine (broth) and cook until reduced by half. 5. Add the diced tomatoes, oregano, and cayenne pepper. Simmer over medium heat for 10 to 15 minutes. The tomatoes should be bubbling. Add 1 can of tomato paste and check for desired thickness. For thicker sauce, add the other can of tomato paste. For a richer sauce, simmer, uncovered longer and DO NOT ADD the tomato paste. Add the capers (optional). Season with salt and pepper to suit your taste. Add the meat and simmer an additional 10 minutes. 6. While sauce simmers, prepare the pasta according to package directions. Be sure to lightly salt the water. Drain the pasta thoroughly. If the pasta will sit for a while before serving, add some olive oil and stir into the pasta to keep the pasta separated. 7. Serve the sauce over the pasta. It should make about 8 servings. |
