6-8 Cooked chicken breasts, chopped
Large jar of your favorite salsa
Chopped green chilies
Shredded Mexican cheese
Chopped jalapeņos
Large flour tortillas

(Measurements will vary based on your personal preference and how many Chiladas you want to make. You can't mess it up.)

Cheesy sauce:

1/2 stick of butter
1/4-1/2 c flour
3-4 c milk, warmed
Velveeta
Salt and pepper
Cumin

Filling:

Mix all filling ingredients in a large bowl. Roll up 1/2 cup of filling into tortillas and place seam side down in 9x13. Make cheesy sauce (below) and pour over Chiladas. Top with shredded cheese and bake at 350 until bubbly.


Cheesy Sauce:

In a medium saucepan melt 1/2 stick of butter. Whisk in 1/4-1/2 cup of flour. Whisk until incorporated to make a rue. On Medium heat, whisk in 3-4 cups of warmed milk, stirring constantly until thickened. Remove from heat and add cubed velveeta cheese. Stir until cheese is melted. Season with salt and pepper and cumin to taste.
