3 c. thinly sliced zucchini, cut slices in 1/2 or strips
1/2 c. oil
1/2 c. grated Romano Cheese-can use Parmesan
1/2 c. sliced onions
1 clove sliced garlic
2 Tbsp. chopped parsley
1/2 tsp. salt or less
4 eggs-slightly beaten
1 c. Bisquick

Directions:
Directions:
Mix all ingredients with a spoon.
Spray a 1 1/2 qt. casserole.
Pour ingredients into casserole.
Bake at 375º for 35 to 40 min. until puffy and lightly brown on top.
Check center with a tooth pick.
Adjust according to your oven temp. I use 3rd. shelf up so bottom does not get too brown.
