1 side salmon, about 1 1/2 lbs
1 C balsamic vinegar
2/3 C honey
1 T Dijon mustard
2 T light soy sauce
1 t salt
1 t pepper

Directions:
Directions:
Preheat oven to 350º F. in a small saucepan, combine vinegar, honey, mustard and soy sauce. Bring to a boil and reduce to a simmer. Allow to simmer for 15 minutes or until a syrup consistency is achieved. Stir occasionally to prevent scorching. Remove from heat. Rinse salmon under cold water and pat dry. Season with salt and pepper. Place on a parchment-lined baking pan and place in the oven. Bake for 10 minutes, then baste with the balsamic glaze, repeating several times until a deep color is achieved and salmon is done ( 145º F internal temperature). Transfer to a platter.
