1/2 lb hickory smoked bacon, cooked and crumbled
1 t. bacon grease or olive oil
1 lb ground beef
2 cloves garlic, minced
1 t. cumin
1 T. ground chipotle pepper
1 1 1/2 lb can chef's cut tomatoes
1/2 t salt
2 T tomato paste
1 15 oz can dark red kidney beans, drained

In a skillet, fry bacon until crispy and remove to drain fat. Cut or crumble the bacon into small pieces and set aside. Drain off all but one teaspoon of bacon grease. (Or drain all the bacon grease and add 1 t. olive oil to the frying pan). Brown ground beef. Place ground beef and bacon in a stock pot over low heat. Add garlic, cumin, and chipotle pepper. Stir to combine. Add the tomatoes and salt. Cook over medium heat for 15 minutes. Add tomato paste if the chili is too runny. Add the drained beans and simmer for 20 minutes. Adjust seasoning to taste. Best served with corn bread and garnished with a sprinkling of cheddar cheese.
