2 Hothouse cucumbers
1/2 Red onion finely chopped
1/2 Red bell pepper diced
1/8 Cup black olives or kalamata
1 small tomato seeded and diced
1 tbls. Dried oregano
1/8 Cup feta crumbled
1/4 Cup flat leaf parsley chopped
Juice of 1 lemon plus zest
1 Tbls olive oil
Salt and pepper

Directions:
Take your cucumbers and stripe them with a peeler, cut into one to one and a half inch sections. Dig out cucumber making sure not to go to the bottom with a melon baller. This will be your cup. Mix all ingredients together and fill each cup.

These look so good on a tray. You can adjust the ingredients somewhat, we love kalamata, and I like a little more feta. Play around and enjoy!
