2 cups milk (I use skim milk)
1 pkg dry yeast (about 2 1/4 tsp)
4 eggs, separated (whites from yolks)
2 1/2 c flour
1 TBSP white sugar
1 TBSP vanilla
1/2 tsp salt
1/2 cup melted butter (I use 1/4 cup)

Directions:
Directions:
Heat milk to about 105ºF and stir in yeast until it is dissolved
Beat egg yolks until frothy and add vanilla, sugar, and yeast/milk mixture.
Mix in flour and salt until most of the lumps disappear.
Add melted butter.
Beat egg whites until stiff but not dry. Fold into batter carefully. Don't overmix.
Let mixture rise (proof) for about 45 minutes in a warm place.
Use in a Belgian Waffle maker. Yield depends upon your waffle maker.
