1 cup sifted all purpose flour
1/2 tsp salt
2 large eggs
1 cup milk
1 TBSP oil

Directions:
Directions:
1. Mix flour and salt.
2. Beat eggs with a beater until light and thick.
3. Add flour and 1/3 cup of milk and continue to beat slowly until all the flour is moistened (about 30 seconds).
4. Gradually add remaining milk and oil, beating only until the mixture is free from lumps, about one minute.
5. Fill greased popover pan or custard cups a little less than half full.
6. Bake in a hot oven (425º) 35 to 40 minutes or until the popovers are firm. Serve at once.
7. Yield depends upon the size of the popover pan

I could never count on my popovers "popping over" until I found this recipe in a very old cookbook of Cecil's Mom (Norma Allen). She gave me the cookbook and I've never had a failure since! The secret is mixing the eggs until they are light and thick.
