2 finely diced peppers (all colors)
1 can blacked eyed peas (rinsed and well drained)
1 can shoe peg corn(drained)
1 bunch cilantro finely chopped
1/2-1 bunch green onions, finely chopped
1-2 avacados diced
1 cup diced tomatoes

Dressing:
1/2 c olive oil
1/2 c red wine vinegar
2 tsp cumin
1 1/2 tsp salt
1/2 tsp pepper
4 cloves garlic minced

Directions:
Directions:
Mix all dressing ingredients and pour over all other ingredients. Make at least 4 hrs ahead of time (or overnight) to refrigerate and let flavors blend.

This makes a HUGE batch, and while it's very tasty for parties, I don't think it tastes very good past the 2nd day of leftovers.
