3 cups all-purpose flour
8 ounce can of crushed pineapple, drained
1 cup unsalted butter, melted
3 eggs
1 tablespoon baking powder
1 tablespoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup crushed walnuts
2 cups zucchini, peeled and grated
2 teaspoons vanilla
1 cup of granulated sugar or honey

Cream cheese, softened

Grease and flour two loaf pans. Preheat oven to 375ºF. Beat eggs in a large bowl and add the sugar or honey, butter, vanilla, and pineapple. Mix dry ingredients in a separate bowl and add to the wet ingredients. Add the nuts and zucchini and mix all together well. Pour batter into pans and bake for at least one hour or until toothpick comes out clean, when testing the individual breads. Cool for ten minutes prior to removing from pan. Can be served warm, with cream cheese as a spread.
