!/4 lb hamburger
1 diced onion
diced garlic
s & P to taste
12 diced carrots (1/4 inch dice)
6 to 8 diced ribs of celery (1/4 inch dice)
1/2 to 3/4 cup barley
1 large tin each of diced tomatoes and tomato sauce
2 tins of beef bullion or 2 tsps beef bullion mixed in 2 cups hot water.
1 tsp thyme

Saute onions & garlic lightly, add hamburger and saute till browned. Add beef boullion and tomatoes. When boiling add barley and carrots and celery. Stirring often because barley will stick to bottom. Add thyme. Taste for salt, may not need depending on the salt content in boullion.

This makes a big pot of soup. I like it because you need only a small amount of hamburger and you can use lots of carrots and celery. Barley is so healthy, and thyme gives it the sweetness. As usual you can play with the amount of ingredients but I just keep it simple. It is also one of those that you can eat with a spoon the first day and any leftovers you use a fork, depending on the amount of barley you use.
