8 cups Hamm Spaghetti sauce, approximately
2 pounds lean ground beef
1 to 2 pounds lasagna noodles
2 pounds lowfat ricotta cheese
1-2 pound lowfat mozzarella cheese, grated or sliced
1 c. freshly grated Parmesan cheese
2 eggs, beaten, optional

Directions:
Directions:
Brown the beef in a skillet and drain. Boil the noodles in 8 quarts of water for 20 minutes or until tender, drain and pour cold water over them, then drain again. If desired, mix the eggs and the ricotta cheese together.

Place about 3/4 c. of sauce in the bottom of the lasagna pan. Tilt the pan so the sauce spreads all over the inside of the pan. Place on it the lasagna noodles. Place them side, by side, touching but not overlapping. On the noodles place the ricotta cheese or cheese mixture. spread it out over the top of the noodles. Top with some of the brown meat, then sliced or grated mozzarella cheese (when we were kids it was always sliced. Once they started manufacturing mozzarella grated, Mom started using that.) Top with more sauce, sprinkle Parmesan over, and repeat the layers until the pan is full (usually 3 layers.)

Place a layer of lasagna noodles on the top (over the last sauce. ) These can be overlapped, if you have enough to overlap. Top with a generous amount of sauce and the rest of the Parmesan.

This is the way Mom used to make lasagna. Others in the family have made variations on this over the years, but this is what we grew up with.
