Ingredients: 1 firm ripe papaya or mango (about 1 lb.) 1/4 cup finally diced red onion 2 Tble chopped fresh cilantro leaves l Tble lime juice 1 fresh jalapeņo or serrano chili, rinsed, seeded, seeded and *minced* *Optional: (To save time, I use Trader Joes, corn and chili salsa and add pre-sliced mango,cilantro and lime) 2 Ahi tuna steaks (each @ 5-6 oz and 1 inch thick) 2 tsp olive oil Coarsely ground black pepper

Directions:1. Peel and seed papaya/mango; cut into 1/2 inch cubes.
2. In a bowl, mix papaya (or mango), onion, chili, cilantro and lime juice. Add salt to taste. ((Or see option noted above for short-cut). Set5 aside while preparing fish or cover and chill up to 4 hours. 3. Rinse fish and pat dry. coat both sides of steaks with oil and sprinkle all over with salt and pepper. Heat 1 10 to 12 inch nonstick frying pan or grill pan over high heat; add fish and cook, turning once, until opaque on both sides but still pink in the center (cut to test), 4 to 6 minutes total. Transfer steaks to plats and spoon salsa over servings. |

Notes: I have prepared this both ways, using the original recipe and the "short-cut." Personally, I prefer my rendition, using mango and TJ's corn salsa! In either case, this is a very fast, easy, healthy and delicious dish!
