Basic Butter Masala Recipe

Big Red onion - 1; grated or finely chopped (Tip: Refrigerated onions don't make you 'cry' much!)
Garlic - 5-6 cloves, grated
Ginger (optional) - 1/2 inch piece - grated or very finely chopped or mashed
Tomato paste - 4 - 6 oz. can
Heavy whipping cream - 6 - 8 oz small container (I like the shelf stable ones at Trader Joe's as it does not need to be refrigerated till it is opened!)
Salt 1 tsp
Cooking oil - 1 tbsp
Garam Masala powder (available at Indian grocery stores)
Dry Fenugreek leaves - 1 tbsp
Cumin seeds (optional) - 1 tsp
Cilantro leaves- washed, chopped - 1 handful

Main addition to this Basic Masala (see Personal Notes) - pick one of these, based on what you want. Quantities that would work are:
Mushrooms 8 oz package - Sliced and sauteed in 2 tsp oil, 1/4 tsp salt OR
Chick peas or Garbanzo (Chana) - 12 oz can, drained and washed OR
Paneer - 16 oz package; drain, cut into 1 inch cubes. Add to a bowl of hot, salted water (1/2 tsp salt) to soften for 2 mins, drain OR
Hard boiled eggs - 8 - 10; poke holes with toothpick or fork so the masala goes into the eggs (Tip: for easy-to-peel eggs, add 1 tsp salt and 1 tsp baking soda to the water while boiling the eggs) OR
Cooked boneless chicken

Heat 1 tbsp oil in a deep pan, add cumin seeds, onion, ginger and garlic. Saute for 8 mins on medium heat till brown. Add tomato paste, mix well and fry for another 3-4 mins. Add fenugreek leaves, salt, 1 tsp Garam Masala, stir.

Lower heat, add Heavy whipping cream, mix well. Simmer for 2 mins. Mix in the Main addition (mushrooms/ garbanzo/ paneer/ eggs/ chicken), cover and let cook for 5-8 mins on low heat. If the masala is too thick, add a little milk to thin it. Garnish with cilantro leaves, and a swirl of cream.

This can be eaten as an accompaniment to rice, roti or naan, or warm wheat tortillas.

This is a basic masala recipe; you can add sauteed mushrooms, garbanzo or chick peas, paneer cubes (paneer is an Indian cottage cheese), hard boiled eggs, or cooked boneless chicken pieces.
