7 lbs. meat or 8lbs 90-100 hamburger
1 1/3 lb. fat if using 90-100omit
2 cups cold water
1 ¾ cup dry milk
1/6 cup sugar
¼ cup salt
1/6 cup mustard seed
4 Tbs cracked pepper
1 Tbs liquid smoke
2 Tbs granulated garlic
2/3 Tbs sodium nitrite

Directions:
Directions:
Mix water and dry milk together until no lumps then add reaming ingredients adding the sodium nitrite last, when mixed together add meat and mix. When mixing ingredients soak casings in cold water.
Put casing onto stuffer and stuff until firm tie end off. Put into a warm oven at 190 degrees until internal temp reached 152 degrees put sausages into cold running water until temp comes down to 100 degrees. Refrigerate for at least 12 hours. And enjoy
