Pepperidge Farm Puff Pastry Sheets (NOT Shells!) - 1 package
All-purpose flour to dust on - 1/2 cup
Cooking oil - 1 tbsp
Frozen Carrots & Peas - 1 pound pack
Frozen French-cut Beans - 1 pound pack
4 Red or White Potatoes
Garlic - 5 cloves - grated or chopped (or Garlic powder 1 tsp)
Salt to taste
Fennel seeds - optional - 2 tsps
In a small bowl, mix 1 tbsp flour with 2 tbsp water.

Cook potatoes (stovetop or microwave), peel, and crumble into pieces (don't mash). Open the pastry sheet package, take off the inside covers and open up the tri-folds onto a lightly flour dusted area on the counter. Let thaw (about 30 mins.); this will make the sheets pliable.

In a wide-mouthed wok or sauté' pan, put in the oil and when it is heated, put in garlic, sauté for 30 secs and add frozen French beans, carrots & peas. Sauté' for 3 mins on high heat, add salt and fennel seeds, mix well. Add potatoes, mix well, take off stove to cool. Pre-heat oven to 400º F.

Use a pizza-cutter or knife to cut the thawed sheets on the folds - you should now have six sheets. Take one sheet, roll out with a rolling pin (if available), and cut into 3 equal pieces. Spoon in the vegetable mixture (about 1 and 1/2 tbsp) onto the lower side of a piece, fold over and seal with the water-flour paste. Do the same with all 18 sheet pieces. In a cookie sheet or baking pan (use parchment paper to line the bottom of pan, or lightly dust with flour), place the puff pastries, and bake for about 15 mins., flipping the pastries over after about 10 mins. Remove and enjoy hot!

'Vegetable puffs' are available baking hot in street-side bakeries in India, and are extremely popular. You can add 1 tsp of Sriracha chili paste while sautéing the vegetables to add a kick if you want.
