Ingredients:  
Chicken pieces (drumsticks, thighs or breasts), enough for 4-6 people
6-8 fresh ripe tomatoes or 1 can diced tomatoes
1 chopped onion
1-2 cloves garlic
salt and pepper to season
2-3 small sprigs fresh rosemary (remove from stem)
10 leaves coarsely chopped fresh sage
small handful of coarsely chopped italian parsley

Directions:
Directions:
Brown seasoned chicken pieces, garlic and onion well in large saucepan. Add tomatoes and fresh herbs, simmer at low-med heat stirring every 5-10 minutes until sauce has reduced and thickened (about 1-1 1/2 hours.) Serve with rice or roasted potatoes.
