Ingredients: 3 cups white sugar 2 1/2 cups all purpose flour 1 cup cocoa powder 2 tsp baking soda 1 tsp baking powder 1 tsp salt 3 large eggs 1 1/2 cups buttermilk 1 cup strong brewed coffee, cooled 3/4 cup vegetable oil 1 tsp vanilla 4 oz unsweetened chocolate squares, melted and cooled slightly For the Frosting: 1 1/4 cups white sugar 1/3 cup cocoa powder 1 cup whipping cream 6 oz semisweet chocolate squares 2 tsp vanilla 8 oz light cream cheese, softened 1 cup butter, softened

Directions:Combine flour, sugar, cocoa powder, baking soda, baking powder and salt in a large bowl. Set aside. In another bowl beat eggs on high speed for about 3 minutes, until they've thickened slightly and are a rich yellow colour. Add buttermilk, coffee, oil, vanilla and melted chocolate. Mix on low speed until well blended. Gradually add dry ingredients to wet ingredients and mix on medium speed until batter is smooth. Divide equally among 3 X 9" greased and floured pans. Bake @ 350 approx 25-30 mins. (I usually cut a circle of parchment paper and line the bottom of the pan, the cake releases easily from pan.) Cool in pans for 10 mins before removing, remove parchment and layer with caramel or frosting. To make frosting: Whisk sugar, cocoa and whipping cream in a saucepan. Cook slowly over medium heat whisking constantly until it comes to a boil, cook 1 minute. Remove from heat and stir in chocolate until melted. Stir in vanilla and allow to cool to room temp. Beat butter and cream cheese in mixing bowl on high speed until smooth, add cooled chocolate mixture and beat until well blended. I usually use less whip cream and add some kahlua with the vanilla for that extra kick! Refrigerate for 30-60 minutes to allow the frosting to stiffen slightly. Frost layers and sides of cake. Cover and refrigerate. |

Notes: This cake is time consuming but is worth the extra effort, it's the best chocolate cake recipe I've found. I've made this for girl's night with friends with homemade caramel sauce between the layers and topped with kahlua chocolate frosting. The girls won't even put it on a plate, they just dive in with a fork in one hand and a glass of wine in the other :)
