1/2 lb ground pork
1/2 lb ground veal or ground beef (I prefer the ground veal)
4 oz of mozzarella cheese
1 cup Romano or Parmegiano cheese
1 cup Panko breadcrumbs
1 egg
2 cloves garlic, minced
1 tbsp olive oil
2-3 cups tomato sauce

Directions:
Directions:
1. Mix first 7 ingredients in a medium size bowl by hand until mixture is uniformly firm.
2. Coat your hands with the olive and form balls about the size of a golf ball. (*I use an ice cream scoop.)
3a. If you like your meatballs soft - Heat the tomato sauce and pour over meatballs in a lasagna pan.
3b. My Elaine likes her meatballs crunchy on the outside….so I fry them first in a pan. Then drop them into the sauce and bake them.
4. Bake in a 350F oven for 25 mins.
5. Remove from heat and let rest for 5 minutes.
6. Serve with chopped parsley.
