• Moong dhal (split green gram) 1 cup
• Cucumber 1 medium size ( can be substituted by a cup of grated carrot)
• Fresh coconut gratings 1/4 cup
• Green Chili small 2
• Fresh Coriander leaves (Parsley) chopped 1 table spoon
• Fresh squeezed Lemon juice ½ table spoon or as needed
• Salt as needed
• Seasoning- mustard seeds 1 tea spoon, 2 tea spoons cooking oil, hing ( asafoetida), turmeric powder.

Wash the Moong dhal in cold water, soak for about 20 minutes.
In the mean time, wash the cucumber. Cut the tips off at the 2 ends. Peel the cucumber. If there are seeds, remove them. Chop the cucumber into fine pieces on a china plate. Do not discard the juice.

Rinse the Mongo dhal and drain all the water. In a large bowl, add the drained Moong dhal, Chopped cucumber with the juice, grated coconut, chopped chili, Lemon juice , salt and Parsley leaves . Mix well.

In a small frying pan, heat the cooking oil, add 1/8 tea spoon hing, a pinch of turmeric powder and the mustard seeds. When the mustard seeds splatter, turn the stove off. Once this cools to room temperature, add the seasoning to the above mixture.
