4 CUPS POWDERED SUGAR
1/3 CUP LIGHT CORN SYRUP
1/2 TSP PEPPERMINT OIL OR EXTRACT (CAREFUL STRONG STUFF)
CORNSTARCH FOR DUSTING
1 16OZ BAG SEMI-SWEET CHOCOLATE CHIPS

IN A MEDIUM BOWL, BEAT THE EGG WHITE UNTIL STIFF AND FORMS PEAKS. SLOWLY ADD THE POWDERED SUGAR. USING YOUR HANDS ADD THE CORN SYRUP AND PEPPERMINT OIL KNEADING THE MIXTURE UNTIL IT HAS A SMOOTH CONSISTENCY OF DOUGH. USING A FLAT SURFACE ROLL OUT LIBERALLY DUSTING THE SURFACE AND ROLLING PIN WITH CORNSTARCH.
WITH A 2 1/2 INCH BISCUIT CUTTER. CUT THE DOUGH APPROX 20 PATTIES. PLACE ON COOKIE SHEET AND PLACE IN REFRIGERATE TILL FIRM.

COATING:
MELT THE CHOCOLATE CHIPS IN MICROWAVE SET ON HIGH FOR 2 MINUTES, STIR HALFWAY THROUGH THE HEATING TIME. DO NOT OVERHEAT OR COOK. DROP EACH PATTY IN CHOCOLATE AND COAT COMPLETELY. USING TWO FORKS, LIFT THE PATTIES OUT OF THE CHOCOLATE, LET EXCESS DRAIN OFF PATTY. PLACE EACH PATTY ON SHEET OF WAX/PARCHMENT AND RETURN TO REFRIGERATOR TILL FIRM. ABOUT 30 MINUTES..
