9" springform pan
3/4 cup sugar
1 1/2 lbs whole milk Ricotta cheese
6 large eggs (separated)
zest of one whole orange
zest of one whole lemon
1/4 tbsp salt
1/4 cup flour

Directions:
Directions:
Add all ingredients together except the egg whites.
Beat the egg whites until frothy and fold into cheese batter.
Butter and sugar the inside of the springform pan.
Bake at 375º for 1 hour. Cool in pan for at least 15 minutes.
Remove springform pan.

(Optional - if you want to crush up vanilla wafers and mix with butter for the bottom of the pan, this works well also.)
