5 1/2 to 6 1/2 cups all purpose flour or bread flour
2 packages active dry yeast (5 t.)
2 T. Sugar (it wouldn't be her recipe without sugar in it.)
1 T. salt
1/4 c. margarine, softened
2 1/4 c. warm water

Directions:
Combine 2 cups flour, yeast, sugar, salt in a large bowl. Add margarine and hot water. Beat 1 minute. Stir in the rest of the flour. Knead 5-10 minutes, cover with plastic wrap and towel, leave for 20 minutes. Shape loaves in greased pans, brush with oil. Refrigerate 2 to 24 hours.

Remove bread from refrigerator. Let stand 10 minutes while preheating oven to 400º. Bake 30 to 40 minutes.

Variations:

French Bread: Reduce sugar to 1 T. replace margarine with 2 t. Shortening, and increase water to 2 1/2 c.

Whole wheat bread: Reduce all-purpose flour to 3 1/2 to 4 1/2 c. Add 2 1/2 c. whole wheat flour. Replace sugar with 1/4 c. brown sugar. Increase margarine to 3 T. Bake 35 to 45 minutes, covering with foil last 5 to 10 minutes.

Sweet rolls. Decrease flour to 5-6 c. Increase sugar to 1/2 c. Increase margarine to 1/2 c. (or use butter). Decrease salt to 1 1/2 t. Decrease hot water to 1 1/2 c. add 2 eggs and oil.
