2 pkgs. Oriental-flavored ramen noodles
1 pkg. 1# frozen broccoli stir-fry, (like Bird's Eye)
1 pkg. (16 oz) egg substitute (I used regular eggs)
1 tsp. sesame oil
1 seasoning pack from ramen noodles

Sauce:
2 cups water
remaining seasoning pack
1 T soy sauce
1 tsp. sesame oil
2 T cornstarch
1/4 c. cold water

Directions:
Directions:
Heat oven to 425º. Cook and drain the 2 packages of ramen noodles. Do not season with seasoning packets. Spread into bottom of 10" ovenproof greased skillet. Top with broccoli stir-fry. In a bowl whisk together eggs (or egg substitute) 1 tsp of sesame oil and 1 seasoning packet. Pour this mixture over vegetables. On stove cook 5 minutes over medium heat. Place skillet in oven. Cook for 13 minutes or until cooked through.
In a saucepan, bring 2 cups water, seasoning packet, soy sauce and 1 tsp. sesame oil to a boil. Mix cold water and cornstarch. Whisk into soy mixture. Cook 1 minute more, stirring. Pour over cooked egg mixture.
