A one pot meal that is full of flavor and layers of yummy.

Prep Time - 10 min
Cook Time - 40 min
Total Time - 1 hr

Ingredients
8 oz Italian turkey sausage - cut into bite size pieces
1/2 cups diced onion
2 cloves garlic, minced
2 cups low-sodium, fat free chicken stock
10 oz Rotel tomatoes & chilies (if you want to make it not spicy just used chopped stewed tomatoes)

1/2 cup Fat-free half & half

8 oz whole wheat penne pasta - dry, not cooked

1 cup low-fat Monterey Jack cheese, shredded

1/3 cup thinly sliced scallions

In a large oven safe skillet over medium heat cook sausage and onions until lightly browned

Add in garlic and cook until fragrant, about 1 minute (make sure to stir so it does not burn)

Add in broth, Rotel, half & half and dry pasta

Stir to combine everything well

Bring liquids to a boil, cover skillet, reduce heat and simmer for 15 minutes

Uncover and simmer for an additional 5 minutes until sauce is thickened a little

Remove pan from heat and add in 1/2 of the cheese, stir to combine

Spread the remaining cheese over the pasta and sprinkle scallions

Broil for 5-10 minutes until cheese is bubbly and slightly browned

Remove and let stand for 5-10 minutes
