4 chicken cutlets
Rajah NaturalColor Pandoori Masala Indian seasoning
1 T coconut oil
chopped onion
3 small zucchini or yellow squash
salt
cayenne pepper
frozen mixed vegetables
1 c chicken broth
1 T olive oil

Directions:
Directions:
Cut chicken cutlets into thirds and marinate in Indian seasoning. Over medium heat, sauté chicken in olive oil; brown on both sides. Add chicken broth and coconut oil. Cut up the squash and add along with the frozen vegetables and sauted onion. Salt and pepper to taste. Put a lid on after ingredients come to a boil; lower heat and cook in its own juice until all vegetables are tender. Serve with basmati or jasmine rice as a side dish.
