2 # small to medium shrimp
2 onions chopped
2 bell peppers chopped
2-3 stalks celery chopped
1 whole chicken
1 (28oz) can of diced tomatoes
1 large package of cut okra
Salt, pepper, parsley to taste
Liquid crab boil

Directions:
In a large pot boil chicken until done. Remove the chicken, cool and pick from the bone. Shred into bite size pieces. Save the liquid as this will be the base of your gumbo. In a skillet saute onions, bell pepper and celery. At this point you can put in your okra and cook until not stringy. I like to put mine in at the end so it will not break up and it helps to thicken. Add all ingredients except shrimp, okra if adding at the end, and crab boil. Cook as long as you like adding water as it cooks down. Add crab boil carefully as it is very concentrated. Add okra and cook until tender. Add shrimp. Cook until shrimp are cooked through. This gumbo recipe is more like soup. If you like thick gumbo you can make a roux and add that to it until desired thickness. Can also thicken with filet of gumbo.
