6 pork chops
2 - 3 tbsp. Extra Virgin Olive Oil
2 tbsp. onion
1 green pepper ring
1 #2 can tomatoes
1/3 cup raw rice
1 tsp. salt
dash black pepper

Directions:
Directions:
Cover bottom of skillet or Dutch oven with oil over medium heat. Brown chops (both sides) and set aside. Add 2 tbsp. chopped onion and 1 green pepper ring to bottom of pan and sear (2 -3 mins.). Add tomatoes and stir. Add chops back to pan and sprinkle 1/3 cup raw rice around chops. Add 1 tsp. salt and dash of black pepper. Cook over low heat (covered) until chops and rice are tender (approx.20 - 30 mins). If it gets a little too dry, add a small amount of water or tomato juice.
