Leaf lettuce, enough for 4 plates
1 tomato sliced, but not all the way through, for each serving
1/2 lb. Baby shrimp, thawed
2 Hard-Boiled Eggs
1 Avocado, sliced

Louis Dressing:
1/2 cup plus 2 tbsp. chili sauce
1 tsp. mince onion
1/4 tsp. Worcestershire Sauce
1/2 cup Mayonnaise
1/2 tsp. sugar
Salt to taste.

Directions:
Directions:
Refrigerate dressing 30 minutes.
On a plate, Spread lettuce to cover plate. Place tomato on plate and push apart to make it look like a flower. Fill with some baby shrimp. Pour on Louis dressing Garnish with sliced eggs and avocados.
Variation would be to use fresh lump crab meat.
