2 cups water
1 cup dry quick oats
3 Tablespoons butter
1 package dry yeast
1/3 cup warm water
1/3 cup brown sugar
1 Tablespoon sugar
1 teas. salt
4 3/4 to 5 1/4 cups flour

Directions:
In a saucepan bring 2 cups of water to boil. Add oats and butter. cook and stir 1 minute (only) Remove from heat. Cool to lukewarm. In large bowl dissolve yeast in 1/3 cup water. Add cooled oats mixture, sugars, salt and 4 cups flour. Beat until smooth. Add enough flour to form a soft dough. Turn onto floured surface; knead 6-8 minutes kneading in more flour until smooth and elastic. Let rise inn warm place until double; Punch down and let rest 10 minutes. Shape into rolls and let rise again. Bake at 350 for 20-25 minutes.

When Grandma Smith came for dinner we always asked her to bring rolls because she was so good at making bread. As she got older and less able she found this recipe for rolls as her contribution to dinner. It has become a favorite at all of our holidays and it's healthier too!
