1 8 OZ PACKAGE CREAM CHEESE
1 CUP WHOLE MILK
1 BOX INSTANT VANILLA PUDDING
1/2 CUP FROZEN LIMEADE CONCENTRATE THAWED
1 1/2 TSP RUM EXTRACT

TOPPING:
1 1/2 CUPS WHIPPING CREAM (HEAVY CREAM)
1/4 CUP POWDERED SUGAR
3/4-1 1/2 TSP MINT EXTRACT

PRE BAKE PIE SHELL IN A 9 INCH GLASS PIE PAN FOR ABOUT 10-12 MINUTES. LET COOL COMPLETELY. IN MIXING BOWL BEAT CREAM CHEESE UNTIL SMOOTH AND CREAMY, ADD REMAINING FILLING INGREDIENTS AND BEAT ON MEDIUM SPEED FOR ABOUT 2 MINUTES.SHOULD BE THICK AND CREAMY. SPOON FILLING EVENLY INTO PIE CRUST REFRIGERATE.
IN SAME BOWL, BEAT TOPPING INGREDIENTS ON MEDIUM SPEED UNTIL STIFF PEAKS FORM. SPREAD TOPPING EVENLY OVER FILLING REFRIGERATE UNTIL SET.
