Ingredients:  
Chicken – Whatever you like (Thighs, Breasts, Thighs with bones or even whole chicken) – About 2 lbs

Onions – 2 medium sized - Thinly sliced
Garlic – 6 to 7 cloves
Ginger – 1 to 1 ½ inch piece – Crushed together with garlic to a paste
Tomatoes – 1 or 2 medium sized
Green Chillies – 4 or 5 sliced depending on your spice level
Mint – 14 to 15 leaves – cut up
Cilantro – Half a bunch
Lime– ½ of it juice
Yogurt – 2 tbsp (Regular Plain Yogurt)
Basmati Rice – 1 ½ cups (It is equal proportion to the chicken or a little more) Wash and rinse

Spices
Chicken Tikka Masala (Get it at Indian stores)
Cinnamon – 2 to 3 inch stick
Cloves – 6 or 7
Bay Leaf - 2
Anise Flower - 2
Fennel Seeds – 1 Tbsp or more
Cardamom – 3 or 4 (Get it at Indian stores)
Cayenne Powder – Add to your taste
Paprika Powder – Mainly for the color
Turmeric Powder – 1 tsp

Directions:
(1) In a big pot, add oil may be around Ό cup or so, Once it is hot, sautι the onions very well

(2) To this add these spices - Cinnamon, Cloves, Bay Leaf, Anise Flower, Cardamom, Fennel Seeds

(3) Less than a minute later, add the ginger-garlic paste

(4) Saute, less than a minute later add the cut up chicken

(5) Add salt generously (This is the only time the chicken is going to absorb the salt)

(6) Add turmeric powder

(7) Let the chicken cook for about 10 minutes or so, until the water kind of evaporates away

(8) Add the cut up tomatoes

(9) Then add the Chicken Tikka Masala, Red Chilli Powder and Paprika Powder, and adjust to your taste. (Needs to be a little salty and spicy as we have to add the rice later)

(10) Leave it for about 3 to 4 minutes

(11) Now add the yogurt to this and mix well

(12) Add the rinsed rice now and sautι for a minute or so, until the rice becomes a little opaque and whitish

(13) Next add a little less than 2x times the rice quantity of water

(14) Mix well

(15) Adjust the seasonings – Salt, Chilli Powder etc

(16) Let it simmer away, until the rice is almost cooked

(17) Now add the lime juice, mint and cilantro and reduce the heat to low, and cover it with a tight lid

(18) Make sure that the rice is thoroughly cooked, if not just continue to sprinkle some water, until it is just right
