1/4 cup chopped Sweet Red Pepper
1/4 cup chopped Onion
1 cup Egg Substitute
1/8 tsp. Salt
1/8 tsp. Pepper
1 small Tomato, chopped
1/2 cup torn fresh Baby Spinach
1 1/2 tsp. minced fresh Basil
2 whole gyro-style Pitas (6 in.)
2 tbsp. crumbled Feta Cheese

Directions:
Directions:
In a small non-stick skillet coated with cooking spray, cook & stir red pepper & onion over medium heat for 3 minutes. Add egg substitute, salt & pepper. Cook until eggs are completely set, stirring occasionally.

Combine the tomato, spinach & basil. Spoon onto pitas. Top with egg mixture & sprinkle with feta cheese. Serve immediately.
